Here are two common knots I use on all of my charters:
The Improved Clinch Knot
The
improved clinch knot is used tie leader to terminal tackle, or line to
a swivel. It is a strong knot that is suprizingly easy to tie.
First,
pass the line through the eye or swivel. After the line has passed
through the eye bring it back and wrap it around the line 5 to 8 times
(ex. 1).

Then
take the terminal end and pass back through the very first loop made
after the eye. Then back through the larger loop made by passing
through the first loop (ex. 2).

Pull the knot tight and clip the terminal end (ex. 3).

The Albright Knot
The Albright knot is used to tie line to leader, or any situation where one line is 5 times larger in diameter than the other.
First,
take your leader and double it over. Pass the smaller line over the
leader and begin to wrap the smaller line around the doubled over
leader (ex. 1).

Repeat that wrapping 10 to 20 times. On the last loop pass the line inbetween the loop in the leader that was created (ex. 2).
2.
Pull the knot tight and clip the teminal ends (ex. 3).
